Apicius Sauce for Roast Duck

       A Duck Feast

INGREDIENTS for The Sauce

A Small anount each of :-

Juniper berries

Pepper

Dried onion

Lovage                       

Cumin

Celery seed

2 tablespoons  sweet red wine vinigar

Tinned grapefruit juice

2 tablespoons anchovy essence.

CelerySeed

METHOD

In a mortar pound the herbs

Add vinigar,grapefruit juice,berries and anchovy essence, wine and olive oil.

Mix thoroughly then cook altogether until the berries are tender

Strain and pour the sauce over the duck and serve.

    sounds great although am not sure how it will taste on tofu (am a veggie now!)

      Try a little on toast for breakfast because the consistency is more like a relish and not a pouring sauce.

    This is great! Definitely wish I’d seen this recipe before cooking Sunday’s duck! (might have to hold the anchovies, tho!)
